Baguette with pea paste

Ingredients for 4 servings:

  • 250 g peas, fresh or frozen/canned
  • 75 ml olive oil
  • 1 lemon(s)
  • 2 garlic cloves
  • 100 g Parmesan, freshly grated
  • 4 tbsp crème fraîche
  • some salt
  • 2 tbsp chives
  • some lemon pepper
  • 4 baguettes (mini baguettes)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Bruschetta in a different way

Blanch the fresh peas in salted water for about 2 minutes, then rinse and drain. Grate the lemon zest. Finely chop the chives. Crush the garlic. Roughly puree the peas with the olive oil, add the lemon zest, garlic clove, Parmesan cheese, and crème fraîche, mix everything together, and season with salt. Halve the mini baguettes lengthwise and briefly toast them cut-side down on the grill. Brush with the pea mixture and grill for another 1-2 minutes at medium heat, season with lemon pepper, and garnish with the chives. Tip: This also works with a regular baguette or ciabatta. In this case, cut the baguette into slices.
