Baked apple muffins

Ingredients for 1 servings:

  • 100 ml apple juice
  • 50 g raisins
  • 75 g almonds
  • 3 apples
  • 150 g butter, soft
  • 100 g cane sugar
  • 1 vanilla pod(s), including the pulp or 1 packet of vanilla sugar
  • 2 eggs, room temperature
  • 200 g wheat flour
  • 1 tsp baking powder
  • 150 ml milk
  • 1 tsp cinnamon
  • Powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Heat the apple juice and soak the raisins in it for about 30 minutes. Meanwhile, roughly chop the almonds and dice the cored apples. Fry both in 1 tablespoon of butter until golden brown. Cream the remaining butter with the sugar, cinnamon, and vanilla seeds until fluffy, then stir in the eggs. Mix the flour with the baking powder and sift it over the mixture. Stir in the milk until a smooth batter forms. Preheat the oven to 180°C (top/bottom heat). Mix the drained raisins with the apple-almond mixture and fold into the batter. Pour the batter into the muffin cups and bake for about 30 minutes. Makes 12 muffins.
