Baked apple muffins

Ingredients for 1 servings:

  • 100 ml apple juice
  • 50 g raisins
  • 50 g butter
  • 100 g almonds, chopped
  • 3 apples
  • 150 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 tsp cinnamon powder
  • 2 eggs
  • 200 g flour
  • 1 tsp baking powder
  • 150 ml milk

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 40 minutes

Heat the apple juice. Soak the raisins in it for about 30 minutes. Heat the butter in a pan and add the chopped almonds. Peel the apples, cut them into small cubes, add them to the pan, and fry until golden brown. Set aside for now. Put the butter, sugar, vanilla sugar, and cinnamon in a mixing bowl and beat until fluffy. Add the eggs and mix. Sift the flour and baking powder together, then add and mix. Add the milk and mix well. Drain the raisins well and mix with the apple and almond mixture. Fold this mixture into the batter. Fill the batter into muffin cups and place on a baking sheet. Bake at 180 degrees Celsius for about 30 minutes. Makes about 20 muffins.
