Baked apple with marzipan and speculatius

Ingredients for 2 servings:

  • 2 apples (Boskoop)
  • 4 pieces of marzipan (marzipan potatoes)
  • 4 spiced speculatius cookies
  • 1 tbsp, heaped almonds, ground
  • 2 tbsp Amaretto
  • some butter, melted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the apples and core them using a corer. For the filling, crumble the speculatius biscuits and place them in a bowl along with the marzipan potatoes, ground almonds, and Amaretto. Knead everything into a dough. Spoon the speculatius biscuit mixture into the prepared apples. Place the apples in a baking dish and brush with melted butter. Preheat the oven to approximately 170 degrees Celsius (350 degrees Fahrenheit) and bake the apples for about 30 minutes. Vanilla sauce goes perfectly with this filling.
