Ingredients for 1 servings:

  • 8 stalk(s) celery
  • 1 ball of mozzarella
  • 1 tomato(s)
  • 1 ½ liters vegetable broth
  • ¼ cup crème fraîche
  • salt and pepper
  • basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Vegetarian main course low-carb

Wash the celery, remove the strings, cut into pieces, and cook in the broth until tender, depending on your preference—some prefer it firm to the bite, others prefer it cooked through. Drain and place in a casserole dish. Slice the tomato and place it on top of the celery. Season generously with salt and pepper, and top with small dollops of crème fraîche. Slice the mozzarella and place on top. Bake at 180°C (350°F) until the cheese is nicely melted. Season with basil (fresh or dried), if desired. Tip: The broth is good to drink, and can be warmed up and used for dinner.
