Baked Cheese – Spaetzle

The perfect baked cheese – spaetzle recipe with a picture and simple step-by-step instructions.

  • 300 g Flour
  • 4 Eggs
  • 1 tsp Salt
  • 200 g Grated Emmental
  • 4 Onions
  • 1 bunch Chives
  • Oil
  • Pepper
  • 8 tbsp Mineral water
  • 30 g Clarified butter
  • Butter for the baking dish
  1. Work the flour, eggs, salt, pepper and mineral water into a thick dough.
  2. Let the dough rest for a while.
  3. Peel the onions and cut into thin rings.
  4. Heat the butter lard in a pan and fry the onions in it and season with salt and pepper.
  5. Bring a saucepan with plenty of water to a boil.
  6. Put the spaetzle dough in a spaetzle press, pour it in portions into the boiling water and cook.
  7. Then remove the spaetzle with a slotted spoon and rinse briefly under cold water.
  8. Grease a baking dish with butter and put half of the spaetzle in the dish.
  9. Spread the onions and half of the Emmental on top.
  10. Then sprinkle the remaining spaetzle with the grated cheese and place in a preheated oven at 180 ° until the cheese has melted.
  11. I serve with a green salad
