Baked Cheese – Spaetzle

- 300 g Flour
- 4 Eggs
- 1 tsp Salt
- 200 g Grated Emmental
- 4 Onions
- 1 bunch Chives
- Oil
- Pepper
- 8 tbsp Mineral water
- 30 g Clarified butter
- Butter for the baking dish
- Work the flour, eggs, salt, pepper and mineral water into a thick dough.
- Let the dough rest for a while.
- Peel the onions and cut into thin rings.
- Heat the butter lard in a pan and fry the onions in it and season with salt and pepper.
- Bring a saucepan with plenty of water to a boil.
- Put the spaetzle dough in a spaetzle press, pour it in portions into the boiling water and cook.
- Then remove the spaetzle with a slotted spoon and rinse briefly under cold water.
- Grease a baking dish with butter and put half of the spaetzle in the dish.
- Spread the onions and half of the Emmental on top.
- Then sprinkle the remaining spaetzle with the grated cheese and place in a preheated oven at 180 ° until the cheese has melted.
