Ingredients for 2 servings:
- 2 chicken breast fillets
- 1 tomato(s)
- 2 mushrooms
- 2 slices of cheese
- 50 g tomato paste, or more if desired
- 200 g cream
- Basil, fresh
- Parsley, fresh
- Salt
- herbal salt
- pepper
- some olive oil
- some butter
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
juicy and delicious with tomatoes, mushrooms and cheese
Season the chicken breast fillets with salt and pepper and fry in butter. Preheat the oven to 200°C. Wash and slice the tomatoes and mushrooms. Once the fillets are cooked through, remove them from the pan and sauté the mushrooms in the same pan. Then top the fillets with the tomato slices and mushrooms and sprinkle with freshly chopped basil. Sprinkle the tomatoes and mushrooms with a little more pepper and salt/herb salt, if desired. Drizzle with a little more olive oil, then place a slice of cheese on top of each one and place them in the oven until the cheese is melted (top rack so the cheese melts nicely and can brown if desired). Meanwhile, stir the cup of cream into the same pan (which still has the drippings). Now stir in approximately 50g–75g (or as needed) of tomato paste into the cream and season with salt/herb salt, pepper, and freshly chopped parsley. Once the sauce is heated through, remove the chicken breast from the oven and serve. We served it with colorful pasta.
