Baked chicken fillet skewers with gnocchi, zucchini, peppers

Ingredients for 2 servings:

  • 400 g chicken fillet(s) (inner fillets)
  • 250 g gnocchi, from the refrigerated section
  • 200 g bell pepper(s), red, yellow or green, or pointed peppers
  • 200 g zucchini
  • 50 g grated cheese, 17% fat or other cheese e.g. 45%
  • some sauce (chili-garlic sauce) or of your choice
  • Pepper or chili powder
  • Salt
  • Spice mix (pizza seasoning)

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cook the gnocchi (fresh) in boiling salted water for 1 minute. Caution: No longer, or they’ll get too mushy! They’ll go in the oven later! Wash and prepare the vegetables. Halve the zucchini and cut into pieces about 0.5 cm thick. Clean the bell peppers and cut into squares (about 2 x 2 cm). Remove any tendons from the chicken fillets. Prepare wooden or metal skewers. Insert one end of a fillet (about 8 cm long), then thread two gnocchi onto it, then the other end of the fillet over the top, sandwiching the gnocchi between them. Then thread a piece of zucchini and a piece of bell pepper. Repeat this process three times on a skewer. Season to taste. I used salt, pepper, and pizza seasoning, but you can use other seasonings, depending on your taste. These ingredients are enough for four skewers. 2 pieces per person. Now bake at 200 degrees Celsius (230 degrees Celsius preheated) for 15-20 minutes. Sprinkle with grated cheese before the last 5 minutes and continue baking.
