Baked giant scampi

Ingredients for 4 servings:

  • 400 g king prawns, frozen
  • 150 g mushrooms
  • 2 tbsp butter
  • 1 tsp curry powder
  • 250 ml dry white wine
  • 20 ml cream
  • 1 tsp salt
  • 1 pinch(s) pepper, white
  • 5 tsp Parmesan, freshly grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Thaw the king prawns completely and pat dry with kitchen paper. Clean the mushrooms under running water, dry them, and slice them. Melt 1 tablespoon of butter in a saucepan and stir in the curry powder. Briefly fry the king prawns and mushrooms in the curry butter, deglaze with the white wine, and cook for 4 minutes. Stir in the cream, season with salt and pepper, and cook over low heat for another 3 minutes until the sauce is smooth and creamy. Ladle the dish into 4 ovenproof serving dishes, sprinkle with Parmesan cheese, top with knobs of butter, and bake in a preheated oven at 250°C for about 5 minutes, until the cheese is golden brown. Serve immediately.
