Baked leeks

Ingredients for 4 servings:

  • 1 kg leek
  • Salt
  • 4 eggs
  • 125 ml milk
  • Pepper, white
  • Nutmeg, grated
  • 2 slices of toast
  • 4 tbsp Parmesan, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim and wash the leeks, then cut into approximately 10 cm long pieces. Blanch in boiling salted water for about 3-4 minutes and drain well. Whisk together the eggs and milk. Season with salt, pepper, and a little nutmeg. Finely crumble the toast (breadcrumbs will certainly work, too). Place the leeks in a shallow, long ovenproof dish (lightly grease the dish first). Pour the egg wash over them. Sprinkle with toast crumbs and Parmesan cheese. Bake in a preheated oven at 200°C for about 30 minutes. Cover with foil or wax paper, if desired. This goes well with smoked pork or ribs.
