Baked leeks with eggs

Ingredients for 4 servings:

  • 1 kg leek
  • 5 eggs, 4 of which are hard-boiled
  • 250 ml meat broth
  • 3 tbsp tomato paste
  • 4 tbsp cream
  • 1 tsp mustard
  • 100 g cheese
  • 50 g butter
  • Salt
  • Paprika powder
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim the leeks and slice into thick rings. Sauté in meat broth for 20 minutes. Drain and place in a greased casserole dish. Quarter 4 hard-boiled eggs and place them between the eggs. Mix the cooled broth with one egg, tomato paste, cream, and mustard, season with paprika and salt, and pour over the casserole. Sprinkle with grated cheese and knobs of butter and bake in a preheated oven at 200°C for 20 minutes.
