Minced meat sauce

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 carrot(s)
  • 1 stalk(s) celeriac
  • 50 g bacon
  • 300 g minced meat, mixed
  • 300 g tomatoes
  • 100 g butter
  • 1 cup red wine, dry
  • 1 cup meat broth, strong
  • salt and pepper
  • e.g. milk

Working time approx. 30 minutes; Total time approx. 30 minutes

Bolognese sauce

Peel the onion, grate the carrot, trim the celery, chop finely with the bacon, and stir well into the meat. Peel and puree the tomatoes. Gently heat the butter in a saucepan, brown the meat, then pour in the red wine and stir until it has completely evaporated. Now add 1/2 cup of stock and bring to a simmer over low heat, gradually adding the rest of the stock. Once this has also evaporated, stir in the tomatoes, season with salt and pepper, and add enough milk to cover everything. Cover and simmer for 3 hours (do not reduce the cooking time). Thin with a little stock or milk if necessary. Given the long cooking time of this dish, it is advisable to make at least double the amount. It also freezes well.
