Baked Oatmeal

Ingredients for 3 servings:

  • Coconut oil, for the baking pan
  • 100 g oat flakes
  • 1 tbsp chia seeds
  • 250 ml water, hot
  • 250 ml almond milk (almond drink)
  • 40 g hazelnuts
  • 1 banana(s)
  • 40 g raisins
  • 1 tbsp maple syrup, optional, alternatively honey
  • 1 tbsp almond butter, alternatively peanut butter
  • 1 pinch of salt
  • 100 g blueberries

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Baked muesli with blueberries

Preheat the oven to 180°C (top and bottom heat). Grease an ovenproof baking dish with coconut oil. Place the oats and chia seeds in a bowl. Pour in the water and almond milk, stir, and let stand for about 5 minutes. Roughly chop the hazelnuts and slice the banana. Add to the bowl along with the other ingredients and fold everything in well. Pour the muesli into the prepared baking dish and bake in the preheated oven on the middle rack for about 35 minutes until golden brown. Serve with a little yogurt and additional maple syrup or honey as a topping, if desired.
