Baked ostrich steaks

Ingredients for 4 servings:

  • 4 ostrich steaks, 180 – 200 g each
  • 100 g green or black olives, depending on your taste
  • 1 m.-sized tomato(s)
  • 1 small bell pepper(s)
  • 4 mushrooms
  • 1 shallot(s) or onion
  • 1 clove(s) garlic
  • Parsley, flat
  • salt and pepper
  • 200g mozzarella
  • 4 slices of toast
  • 1 cup crème fraîche
  • chives
  • Oil (olive oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Briefly sear the ostrich steaks in olive oil in a pan on both sides. Transfer the steaks from the pan to a baking dish. In the same pan, sauté the diced onion and garlic. Dice the bell pepper, tomato, and mushrooms and sauté them. Dice the mozzarella and add them. Mix with the crème fraîche, add the herbs, and season with salt and pepper. Bind the mixture with the diced toast (without crusts) and pour over the steaks. Bake the whole thing in the oven at 200°C for 15-20 minutes. Serve with wild rice, a light red wine jus, and a good red wine.
