Wild garlic – vegetables – pasta

Ingredients for 4 servings:

  • 500g spaghetti
  • 2 small red bell peppers
  • 250 g mushrooms
  • 1 large onion(s)
  • 1 bunch of wild garlic
  • 2 tbsp pine nuts
  • 300 ml cream
  • some Parmesan, freshly grated
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Prepare the spaghetti according to the package instructions. Meanwhile, finely dice the onion, finely slice the bell peppers, and thinly slice the mushrooms. Heat the olive oil in a large pan. First, fry the onions, then add the bell peppers and mushrooms and fry them. Add the wild garlic and season with salt and pepper. Now add the cream and simmer until the sauce thickens slightly. Toast the pine nuts in a small pan without any fat—be careful, they brown quickly! Add the spaghetti to the pan with the sauce and mix everything well, then season again with salt and pepper. Sprinkle with the pine nuts and freshly shaved Parmesan cheese and serve.
