Baked pollock fillet

Ingredients for 4 servings:

  • 4 fish fillets (pollock or haddock, redfish, cod fillets)
  • 200 g crème fraîche
  • 1 handful of garden herbs, finely chopped, or 1 pack of frozen herbs
  • 2 tbsp tomato paste
  • 5 tbsp cheese, grated
  • e.g. breadcrumbs
  • salt and pepper
  • e.g. butter
  • lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 250°C (top/bottom heat). Then prepare the fish fillet, season with lemon juice, and add a little salt. Not too much, as the breading also contains salt. Grease a baking dish with butter and place the fish in it. Mix the crème fraîche, herbs, tomato paste, grated cheese, breadcrumbs, salt, and pepper, and pour over the fish. Sprinkle with butter and place in the oven. Cook for about 15-20 minutes (depending on the oven). Serve with a fresh salad.
