Ingredients for 4 servings:
- 12 m.-sized potatoes
- 100 g Parmesan
- 4 tbsp olive oil
- salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes
Crashed Hot Potatoes
Peel the potatoes and cook in salted water for about 20 minutes, then drain. Place the potatoes on a baking sheet lined with parchment paper, leaving some space between them. Lightly press the potatoes with a potato masher until they burst, but do not mash them. Drizzle with olive oil, season with salt and pepper, and sprinkle with Parmesan cheese. Bake in the oven at 160°C fan/convection oven (180°C electric oven) for 20 minutes until crispy. Variation: Use less olive oil and drizzle with browned butter before serving.
