Baked Potatoes with Onion – Mushroom and Budwig – Quark – Stuffed Peppers

The perfect baked potatoes with onion – mushroom and budwig – quark – stuffed peppers recipe with a picture and simple step-by-step instructions.

baked potatoes

  • 3 kilo Medium sized potatoes
  • 3 tbsp Homemade vegetable salt
  • 3 tbsp Pepper a.d.M
  • 3 tbsp Sweet paprika
  • 3 handful Rosemary needles

Bell peppers with Budwig quark

  • 15 small Orange peppers
  • 125 g Low-Fat quark drained in the sieve
  • 30 ml Linseed oil
  • 20 ml Fresh milk
  • 20 ml Vegetable salt to season
  • 1 tbsp Sweet paprika
  • 1 size Chopped onion
  • 1 size Also be garlic

for the mushrooms

  • 40 small To medium mushrooms
  • 2 medium sized Onions
  • 1 tbsp Coconut fat “mild”
  • 3 tbsp Oleolux *

With the baked potatoes

  1. Brush and wash these well, then cut lengthways and place on a baking sheet. Then sprinkle these with the spices of your choice – I used vegetable salt, paprika powder, rosemary needles and pepper – and cook in the oven at 180 degrees for about 45 minutes (add the rosemary needles just before the end, otherwise they will burn in the heat)

With the stuffed peppers

  1. Core the peppers, wash them and place them on a cloth or paper towel so that the water can run out. Then mix the quark with the oil, the fresh milk, the chopped onion, the paprika powder and the vegetable salt and let it steep.
  2. Then fill the peppers with it and set aside to pull.

To the mushrooms

  1. Clean the mushrooms with a brush, if necessary, and cut or quarter them once. Leave the coconut oil out in the pan, add the chopped onions and stir well, add the mushrooms and roll in them for a few minutes. Then turn off the heat and let stand for a few minutes, because the Oleolux should not be placed on the mushrooms that are too hot
  2. 5th, because the Oleolux contains linseed oil and that in turn should not get too warm or hot. You can also put the mushrooms in a bowl, that’s how I did it and stir in the Oleolux until it has softened.

Serving …
