Baked salmon with Dijon crust

Ingredients for 4 servings:

  • 4 salmon fillets, approx. 700 g
  • 60 g butter, melted
  • 3 tbsp mustard, Dijon
  • 2 tbsp honey
  • 40 g breadcrumbs
  • 40 g nuts (pecans), chopped
  • 2 tbsp flat-leaf parsley, chopped
  • salt and pepper
  • 1 lemon(s), sliced

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

In a small saucepan, combine butter, mustard, and honey and set aside. Combine the breadcrumbs, pecans, and parsley. Season the fillets with salt and pepper, brush with Dijon, and sprinkle with the breadcrumb mixture. Bake in a preheated oven at 200°C (400°F) for 12-15 minutes. Serve with potatoes and lemon.
