Ingredients
 

* for the dough

  • 90 g Margarine
  • 60 g Sugar
  • 1 Egg
  • 1 pinch Salt
  • 1 tsp Grated lemon peel
  • 250 g Flour
  • 0,5 packet Baking powder
  • Milk

* for covering

  • 2 Apples
  • 1 tbsp Lemon juice

* for the ceiling

  • 2 Eggs
  • 1 packet Vanilla sugar
  • 2 tbsp Lemon juice
  • 100 g Mascarpone

Instructions
 

  • Beat the margarine and sugar until frothy, fold in the egg. Stir in the remaining ingredients, adding enough milk to make a dough that is difficult to tear.
  • Put this in a greased cake tin (either springform pan or pan with a lifting base)
  • Peel the apples, remove the core and cut into small cubes. Put these in a small bowl and drizzle with lemon juice. Then distribute evenly on the dough and press down gently.
  • For the top, beat the eggs with vanilla sugar until frothy, then stir in the mascarpone and lemon juice. (If you like, you can also stir in 1 tbsp sugar.)
  • Pour this mixture onto the apples.
  • Bake the cake in the oven preheated to 200 ° C for about 30-35 minutes (second level from the bottom), until the top is golden brown.
  • Then let it cool down in the mold, take it out and let it cool down completely.
