Ingredients
* for the dough
- 90 g Margarine
- 60 g Sugar
- 1 Egg
- 1 pinch Salt
- 1 tsp Grated lemon peel
- 250 g Flour
- 0,5 packet Baking powder
- Milk
* for covering
- 2 Apples
- 1 tbsp Lemon juice
* for the ceiling
- 2 Eggs
- 1 packet Vanilla sugar
- 2 tbsp Lemon juice
- 100 g Mascarpone
Instructions
- Beat the margarine and sugar until frothy, fold in the egg. Stir in the remaining ingredients, adding enough milk to make a dough that is difficult to tear.
- Put this in a greased cake tin (either springform pan or pan with a lifting base)
- Peel the apples, remove the core and cut into small cubes. Put these in a small bowl and drizzle with lemon juice. Then distribute evenly on the dough and press down gently.
- For the top, beat the eggs with vanilla sugar until frothy, then stir in the mascarpone and lemon juice. (If you like, you can also stir in 1 tbsp sugar.)
- Pour this mixture onto the apples.
- Bake the cake in the oven preheated to 200 ° C for about 30-35 minutes (second level from the bottom), until the top is golden brown.
- Then let it cool down in the mold, take it out and let it cool down completely.
