Baking: Apple Waffle Cake

The perfect baking: apple waffle cake recipe with a picture and simple step-by-step instructions.

  • 5 piece Apple waffles
  • 300 g Apple cubes sour
  • 1 tablespoon Lemon juice
  • 50 g Sugar
  • 3 tablespoon Apple juice
  • 250 g Quark double cream
  • 1 packet Vanilla sugar
  • 1 piece Vanilla pod (pulp only)
  • 1 Knife point Ground lemon peel
  • 75 g Cream
  • 4 leaf Gelatin white
  • Sifted powdered sugar
  1. Bake the waffles from the recipe: Cut apple waffles into small waffles.
  2. Mix the apple cubes with lemon juice. Slowly melt sugar in a pan over medium temperature. Add apple juice and cubes and simmer at low temperature until the caramelized sugar has dissolved.
  3. Set aside two tablespoons of the caramelized apple cubes for garnish. Coarsely puree the rest.
  4. Soak the gelatine in a little cold water and let it swell.
  5. Mix the quark with the vanilla sugar, the pulp of the vanilla pod, a pinch of grated lemon zest and the pureed apples.
  6. Dissolve the gelatin while heating gently and mix with two tablespoons of the quark cream. Now add everything to the rest of the cream and mix carefully. Finally fold in the whipped cream and then let it rest in the refrigerator.
  7. Place five small waffles – as in the photo – on a cake plate and note the position of the pieces. Spread a quarter of the quark cream on top and cover with waffles. Make sure that the cut edges of the wafers are on top of each other. Repeat this until the cream and waffles are used up.
  8. Now sprinkle the waffle cake with powdered sugar before serving, garnish with the rest of the apple cubes and mint leaves.
