Ingredients
- 125 g Grated carrots
- 125 g Grated apple
- 200 g Ground almonds
- 4 Free range eggs
- 200 g Sugar
- 0,5 packet Baking powder
- 50 g Oatmeal, delicate as a blossom
- 1 tbsp Flour
- 0,5 tsp Ground cinnamon
- Powdered sugar and lemon juice
Instructions
- Peel the carrots and apples, core the apples and grate both finely.
- Separate eggs and beat egg whites into snow.
- Mix the almonds, oat flakes, egg yolks, sugar, baking powder, cinnamon and the grated carrots and apples and then carefully fold in the egg whites.
- Grease and crumble a cake tin (this time I used ground almonds instead of breadcrumbs) and pour in the batter.
- Bake at 160 degrees for about 50 minutes. (Chopstick sample!)
- Make a glaze from powdered sugar and lemon juice and cover the hot cake with it. Decorate to your heart's content.
