Baking: Apple and Carrot Cake

Ingredients
 

  • 125 g Grated carrots
  • 125 g Grated apple
  • 200 g Ground almonds
  • 4 Free range eggs
  • 200 g Sugar
  • 0,5 packet Baking powder
  • 50 g Oatmeal, delicate as a blossom
  • 1 tbsp Flour
  • 0,5 tsp Ground cinnamon
  • Powdered sugar and lemon juice

Instructions
 

  • Peel the carrots and apples, core the apples and grate both finely.
  • Separate eggs and beat egg whites into snow.
  • Mix the almonds, oat flakes, egg yolks, sugar, baking powder, cinnamon and the grated carrots and apples and then carefully fold in the egg whites.
  • Grease and crumble a cake tin (this time I used ground almonds instead of breadcrumbs) and pour in the batter.
  • Bake at 160 degrees for about 50 minutes. (Chopstick sample!)
  • Make a glaze from powdered sugar and lemon juice and cover the hot cake with it. Decorate to your heart's content.
