Banana and Coconut Muffins

  • 90 g Sugar
  • 50 ml Neutral oil
  • 1 Egg
  • 150 ml Coconut milk
  • 70 g Coconut flakes
  • Powdered sugar or chocolate icing

  1. Preheat the oven to 190 ° C and fill the muffin tin with the paper cases
  2. Peel the banana and cut into small cubes
  3. Whisk the egg in a bowl, add the oil and coconut milk and mix everything well
  4. In a second bowl, mix the flour, baking powder, salt and coconut flakes together
  5. Now add the dry ingredients and the banana pieces to the egg mixture and carefully fold in
