Banana and Coconut Muffins
The perfect banana and coconut muffins recipe with a picture and simple step-by-step instructions.
For decoration
- 240 g Flour
- 1 teaspoon Baking powder
- 1 Pr Salt
- 90 g Sugar
- 50 ml Neutral oil
- 1 Egg
- 150 ml Coconut milk
- 70 g Coconut flakes
- Powdered sugar or chocolate icing

- 12 Paper cases
- Preheat the oven to 190 ° C and fill the muffin tin with the paper cases
- Peel the banana and cut into small cubes
- Whisk the egg in a bowl, add the oil and coconut milk and mix everything well
- In a second bowl, mix the flour, baking powder, salt and coconut flakes together
- Now add the dry ingredients and the banana pieces to the egg mixture and carefully fold in
- Spread the mixture over the 12 molds and bake in the oven for about 15 minutes
- Switch off the oven and let the muffins stand for another 5 minutes with the door half open
- Leave the muffins to cool completely on a cake wire and dust with powdered sugar or decorate with melted chocolate, as desired
