Banana bread

Ingredients for 1 servings:

  • 1 pinch of vanilla pulp
  • 35 g sugar
  • 200 g banana(s), soft
  • 100 ml plant milk (plant drink)
  • 2 tbsp, heaped coconut yogurt (yogurt alternative), unsweetened
  • 200 g wholemeal spelt flour
  • 2 tsp, crushed cream of tartar
  • 1 tsp, smothered cinnamon
  • e.g. dried fruits, chocolate, nuts, seeds

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

simple, light, not too sweet

In a small bowl, mix the vanilla seeds with the sugar. Then, in a bowl, mash the bananas with a fork. Add the vanilla-sugar mixture, milk, and yogurt and mix. Sift the flour, baking powder, and cinnamon into another bowl. Then mix the dry ingredients into the wet ingredients and mix gently. Only stir as much as necessary. Finally, fold in dried fruit, chocolate, or nuts to taste. I like to use walnuts and raisins, for example. Pour the dough into a loaf pan lined with baking paper, place in the preheated oven, and bake for about 45 minutes at 200°C (top/bottom heat). Check your oven’s temperature for this. Once the bread has cooled, it can be cut into bars and stored in an airtight container for a few days. The bread contains approximately 250 kcal per serving.
