Banana bread with apricots

Ingredients for 1 servings:

  • 400 g flour
  • 200 g ground almonds
  • 1 packet of baking powder
  • 1 pinch of salt
  • 10 apricots, dried, preferably unsulphured
  • 3 banana(s), ripe
  • 60 ml oil, neutral
  • 100 g sugar
  • 3 eggs
  • 200 ml buttermilk

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

Preheat the oven to 160°C fan/convection oven, 180°C top and bottom heat. Line a 30 x 11 cm loaf pan with baking paper. Cut the apricots into small pieces. Mix the flour, baking powder, almonds, and salt well. In a second bowl, combine the sugar, eggs, oil, and buttermilk. Add the flour mixture and mix well. Stir in the mashed bananas and apricots. Pour the batter into the loaf pan and bake on the second-to-last rack for about 75 minutes. If the top is already very browned after 40 minutes, simply cover with a piece of baking paper for the remainder of the time. Let cool on a wire rack.
