Banana Breakfast Cookies

Young and old alike are happy about these delicious biscuits. Biscuits are not usually considered a typical breakfast. But these are made from ingredients so healthy and nutritious that you want to enjoy them first thing in the morning.

Ingredients (for 1 serving)

  • 2 Chiquita bananas
  • 150 grams of rolled oats
  • 50g peanut butter
  • 70 grams of honey
  • 2 grams of cinnamon
  • 0.5 g vanilla extract
  • 0.5 grams of salt
  • 4 grams of baking powder
  • 50 g dried cranberries

Preparation

Preheat the oven to 180°C. Line a large baking sheet with parchment paper and set aside.

Place oatmeal in a food processor and blend until finely chopped but not fully floured.

Peel and mash the Chiquita bananas with a fork. Then add the rolled oats, honey, peanut butter, cinnamon, vanilla, baking soda, and salt and mix until the mixture resembles a moist, sticky dough.

Mix in the dried cranberries. Use an ice cream scoop or a large spoon to form balls of dough. Then spread them out on the baking sheet lined with parchment paper. The flatter the balls of dough, the faster the cookies will bake.

After about 15-20 minutes they will start to turn light brown around the edges.

Now put the biscuits on a wire rack and let them cool down.
