Banana Chocolate Tonka Bean Muffins

Ingredients
 

  • 2 Pc. Very ripe bananas
  • 1 Pc. Egg
  • 60 g Butter or margarine
  • 85 g Brown sugar
  • 1 packet Vanilla sugar
  • 1 Msp Grated tonka beans
  • 150 g Flour
  • 1 tsp Baking powder
  • 1 tbsp Cocoa powder
  • 50 g Pecans or walnuts, chopped
  • 50 g Baking-Proof chocolate droplets

Instructions
 

  • Finely puree the peeled bananas. Whisk egg, butter, sugar, vanilla sugar and tonka bean in a bowl. Stir in the banana puree.
  • Mix the flour, baking powder and cocoa powder in a bowl and sift over the egg-banana mixture. Mix briefly, only until all ingredients are just mixed together. Finally fold in the chocolate drops and chopped nuts.
  • Divide the dough into 10 prepared muffin molds and bake in a preheated oven at 180 degrees (or fan oven 160 degrees) for about 22 - 26 minutes.
