Ingredients

  • 3 Bananas
  • 100 g Pecan kernels
  • 100 g Rye flour
  • 100 g Flour
  • 2 tsp Baking soda
  • 0,5 tsp Cinammon
  • 150 g Cane sugar
  • 2 Eggs
  • 150 g Butter
  • 200 ml Buttermilk
  • 2 tbsp Maple syrup

Instructions

  • Mash the bananas with a fork (the riper the bananas, the better). Finely chop the pecans and set aside 12 pieces.
  • Mix the two types of flour with the baking soda, cinnamon and chopped nuts in a bowl.
  • In a separate bowl, beat the softened butter, sugar and eggs until frothy and then add the buttermilk and maple syrup. Stir in the mashed bananas and finally stir in the flour mixture quickly.
  • Bake the muffins at 180 ° C for 20-25 minutes. Enjoy your meal!

Notes

If you want a glaze, you can simply mix 50 grams of powdered sugar with 1-2 tablespoons of milk and distribute it evenly on the muffins. Simply place a pecan on the muffins to decorate.
