Ingredients

  • 200 g Flour
  • 3 tbsp Unsweetened cocoa
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 180 g Cane sugar
  • 125 ml Buttermilk
  • 100 ml Flavorless oil
  • 1 Egg
  • 100 g Dark chocolate
  • 100 g Couverture whole milk
  • Smarties / gummy bears / brittle / sugar sprinkles

Instructions
 

  • Beat the egg with the sugar until frothy and stir in the buttermilk and oil until a homogeneous mixture is formed. Mash the bananas in a separate bowl with a fork (the riper the bananas, the better it works) and fold into the mass.
  • In another bowl, mix the flour with the baking powder, baking soda and cocoa and gradually stir into the buttermilk and sugar mixture. Roughly chop the chocolate and mix in as well.
  • Bake the muffins at 160 ° C (fan oven) for about 25 minutes (the time may vary depending on the size of the muffins).
  • Melt the couverture in a water bath and distribute it on the cooled muffins. There are no limits to your imagination and creativity when it comes to decoration. Smarties, gummy bears or colorful sugar sprinkles are of course best suited for a children's birthday party (by the way, these muffins were always available on my birthday) But brittle or chocolate flakes are also perfect as decoration.
