Banana jam with candied ginger

Ingredients for 4 servings:

  • 900 g banana(s), peeled and weighed
  • 3 pieces of ginger, candied
  • 100 ml lemon juice
  • 5 tbsp white rum
  • 360 g sugar
  • 1 pack of Gelfix extra (2:1)
  • ½ tsp cinnamon powder
  • 1 packet of vanilla sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 5 minutes; Total time approx. 6 hours 20 minutes

Banana jam spiced with ginger, rum and vanilla

Mash the ripe bananas. Finely chop the candied ginger. Mix all ingredients together and let stand for a few hours (about 6 hours or overnight). Bring to a boil while stirring, then simmer for about 5 minutes. Skim off any skimmed milk if necessary. Immediately pour into prepared jars with twist-off lids, seal, and turn upside down for about 5 minutes.
