Ingredients for 4 servings:

  • 425 g sugar
  • 125 ml lemon juice
  • 1 tbsp lemon(s) – zest, grated
  • 1 kg banana(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine sugar, lemon juice, and zest. Slice the bananas, add them to a saucepan with the sugar mixture, and mix. Let stand for about 30 minutes. Heat the mixture and simmer for about 8 minutes, stirring occasionally. Pour hot into screw-top jars (makes about 4 jars). Keep refrigerated for at least 2 weeks. 660 kcal and 1 g of fat per jar! (This is for the dieters among us.)
