Ingredients for 1 servings:
- 125 g margarine
- 250 g sugar
- 2 eggs
- 1 packet of vanilla sugar
- 250 g flour
- ½ tsp salt
- 1 tsp, heaped baking powder
- Dissolve ½ tsp baking soda in 1 tbsp warm water
- 250 g banana(s), pureed

Beat the margarine until very fluffy. Add the sugar, vanilla sugar, and eggs and mix well. Combine the flour, salt, and baking powder and add to the batter. Then add the dissolved baking soda and the mashed bananas and mix well again. Pour the batter into the muffin cups. Bake at 180°C for about 20 minutes. This recipe yields approximately 20 muffins. For children’s birthdays, you can top with a few sprinkles, if desired.
