Banana muffins with walnut topping

Ingredients for 6 servings:

  • 100 g butter, soft
  • 170 g sugar
  • 4 eggs
  • 50 ml oil (vegetable or sunflower oil)
  • 2 banana(s), ripe, they should already have brown spots
  • 2 tbsp lemon juice
  • 250 g flour
  • 2 tsp baking powder
  • 1 tbsp butter, for the topping and
  • 3 tbsp walnuts, chopped
  • 2 tbsp syrup (maple syrup)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cream the butter and sugar until fluffy. Mix in the eggs one at a time, continuing to beat, and then add the oil. Finely mash the bananas and mix with the lemon juice. Sift the flour with the baking powder, add to the batter along with the bananas, and mix everything briefly. Pour the batter into muffin cups. Melt the butter in a small pan, add the maple syrup and nuts, and simmer for about 2 minutes to evaporate some of the liquid, but do not let it burn. Spread over the muffins. Bake at 170°C (fan oven) or 180°C (top and bottom heat) for 25–30 minutes.
