Banana pancakes

Ingredients for 2 servings:

  • 200 g flour, preferably whole grain
  • 240 ml soy milk (soy drink)
  • 2 tbsp vanilla sugar, homemade
  • 2 pinches of cardamom powder
  • 1 pinch of salt
  • 1 large banana(s), mashed
  • 2 tsp baking powder
  • 1 tbsp oil (macadamia oil)
  • some oil, neutral, for frying
  • e.g. maple syrup

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

fluffy, juicy and vegan

Carefully mix all ingredients into a smooth batter. Heat a little neutral oil in a nonstick pan and fry small pancakes one at a time. Makes about 14. Stack on two plates and drizzle with plenty of maple syrup. Serve immediately and enjoy.
