Raw food from the dehydrator
Wash the strawberries and place them in a blender. Peel the bananas and add them to the blender in chunks. Add the cinnamon and the juice and pulp of one lemon. Blend everything well in the blender until you have a uniform, creamy or viscous mixture. Line the dehydrator trays with dehydrator film and spread the fruit mixture onto the film with a ladle. You will need about 1.5 ladles per tray. For the most even consistency, shake the tray gently on the kitchen counter with a ladle after spreading the fruit mixture. Then leave to dry in the dehydrator at 46°C for 12 hours. Rolled up and possibly cut into smaller pieces, it makes an ideal snack between meals or to take with you on hikes. The fruit leather can also be used for dessert creations and filled accordingly. If packaged airtight, the fruit leather will keep for many weeks to several months. Raw food note: Only foods heated to a maximum of 42°C are considered raw food. However, such a liquid consistency creates evaporative cooling, and since the fruit leather is not dried to complete dryness, the fruit’s temperature never exceeds 42°C. Of course, it can also be dried in the oven, but since most ovens can only be set to temperatures above 50°C, it is then no longer considered raw food.
