Ingredients for 1 servings:
- 250 g spelt flour type 630
- 100 g wholemeal rye flour
- 2 tbsp sunflower seeds
- 2 tbsp oat flakes
- 2 tbsp green spelt meal
- 1 cube of yeast, fresh
- 180 ml water
- 1 tsp sugar
- 1 ½ tsp salt
- 1 banana(s), peeled, chopped
- 100 g walnuts, chopped as desired
- 150 g yogurt
- 1 tsp flaxseed, if desired
- 1 tsp oil for the mold
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Mix the lukewarm water with the sugar, add the yeast, and let it rise for about 15 minutes. Meanwhile, combine all the other ingredients in a bowl. Then add the yeast and water, mix everything well, and knead. Pour the dough into a loaf pan greased with oil and let it rise in a warm place for about 30 minutes. Bake in a preheated oven at 200°C (top/bottom heat) for about 45 minutes.
