- The classic among BBQ sauces with apples and that special something from me: grilled vegetables.
- Preparation
- Grill the garlic, onions, chilli and paprika at about 180 degrees hot air, alternatively you can grill the vegetables over charcoal.
- As soon as the skin of the chilli and bell pepper lifts, remove them from the tube, add the onion and garlic. Let everything cool down.
- Peel the skin off the peppers and chilli.
- Finely chop half an apple, strain the juice through a sieve.
The sauce
- Squeeze the onion and garlic straight from the skin into the pot and fry them briefly, add the tomato paste, caramelize everything with sugar and finally deglaze with apple cider vinegar.
- Add the paprika, chilli and the apple mixture. Let everything simmer gently. Gradually pour in the apple juice.
- Season to taste with celery salt and a pinch of rosemary
tip
- This classic sauce can be easily refined with many other ingredients and herbs. If you like it spicy, just take several and hotter chili peppers.
