- 120 ml Cola
- 20 ml Maple syrup
- 150 ml Orange juice
- 1 kg Vine tomatoes
- 2 tsp Mustard seeds
- 1 tsp Caraway seeds
- 1 Tl Lemon pepper
- 1 tbsp Paprika
- 1 tsp Dried thyme
- 0,5 tsp Smoked salt
- 2 tbsp Dried ginger
- Worcester sauce
- 2 tbsp Forest blossom honey, liquid
- 10 ml Jalapeno spice
- 3 tbsp Tomato paste concentrated three times
- 1 tbsp Yellow curry paste
- We are invited to a 30th birthday. It is supposed to be grilled and the BBQ sauce goes well with it as a little surprise.
- Reduce the cola and maple syrup, deglaze with orange juice and reduce again. (It should have a syrupy consistency).
- Cut the tomatoes crosswise, scald them and peel off the skin, cut eighths and put them in the pot. Let the whole simmer until the sauce thickens by itself. Roast the spices in a coated pan without fat and add. Season to taste with salt and Worcester sauce.
- Stir in the honey and jalapeno spice and season to taste again. Spice it up again with jalapeno spice. Thicken a little with the tomato paste and curry paste.
- Brush the sauce through a fine hair sieve and fill it. The birthday can come. Bon appetit.
