Bean salad with herring

Ingredients for 8 servings:

  • 6 herring fillets
  • 500 beans, green, frozen
  • 3 stalk(s) celeriac
  • 2 bell peppers, red
  • 2 bell peppers, yellow
  • 1 oak leaf lettuce
  • 4 shallots
  • 80 ml wine vinegar
  • 4 tbsp white wine
  • 2 tbsp mustard
  • 120 ml oil
  • Salt
  • pepper
  • Sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Cook the beans in salted water for about 10 minutes. Cut the herring into pieces. Cut the celery and bell pepper into rings or strips. Rinse the lettuce, shake dry, and tear into pieces. Mix everything together. Whisk together the vinegar, wine, mustard, and oil. Finely chop the shallots and stir in. Season the dressing with salt, pepper, and sugar and drizzle over the salad.
