Beef roulades

Ingredients for 4 servings:

  • 6 beef roulade(s)
  • Mustard
  • salt and pepper
  • Paprika powder, sweet
  • 6 gherkins or a little more
  • 200 g sauerkraut or a little more
  • oil
  • Sauce thickener, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours 15 minutes; Total time approx. 2 hours 30 minutes

Brush the roulades with mustard and season with salt and pepper. Top each with some sauerkraut and quartered gherkins and roll up. Secure with roulade pins. Then fry in hot fat and season the outside all over with pepper, salt, and paprika. Add some chopped sauerkraut and gherkins to taste and fry. When the roulades are browned, deglaze with water. Simmer for about 2 hours. Then season the sauce to taste and thicken further if necessary. Serve with potatoes, dumplings, or spaetzle, or perhaps with salad or vegetables.
