Beer ham casserole with asparagus

Ingredients for 4 servings:

  • 2 gr. can/n asparagus, sections with heads (1kg)
  • 250 g sausage (beer ham) in slices
  • 80 g butter
  • 3 eggs
  • 1 cup sour cream
  • 80 g Parmesan
  • 30 g breadcrumbs
  • Orange peel, grated
  • Salt
  • Pepper, freshly ground white

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Roll the drained asparagus pieces in the beer ham and layer the rolls in a baking dish. Melt the butter and separate the eggs. Beat the egg whites until stiff peaks and the egg yolks until frothy. Stir the sour cream and melted butter into the egg yolks. Add the Parmesan cheese and breadcrumbs. Season with orange zest, salt, and pepper. Fold in the beaten egg whites. Spread the mixture over the beer ham rolls and bake in a preheated oven at 200°C for about 20-30 minutes.
