Beer steak with onions

Ingredients for 4 servings:

  • 4 pork steaks from the neck
  • Salt and pepper, freshly ground
  • 2 tbsp mustard, medium hot
  • 5 large onions
  • 3 garlic cloves
  • 1 bunch of parsley
  • 300 ml beer, dark or light
  • Oil for frying
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Season the meat generously with salt, pepper, and cayenne pepper. Brush both sides with mustard. Halve 2 onions and slice them into strips, finely chop the garlic cloves, and mix. Finely chop the parsley. In a bowl, layer the onions, garlic, and meat. Fill with beer and sprinkle with parsley. Cover with foil and marinate in the refrigerator, preferably overnight, but for at least 3 hours. Halve 3 onions and slice them into strips. Set aside. Preheat oven to 80°C. Heat a little oil in a pan. Remove the meat from the marinade, drain well, and sear in the oil until crisp (caution: the marinade will cause it to splatter during frying!). Reduce heat and add 3-4 tablespoons of marinade to the pan along with the onions and garlic. Let it reduce. Finish cooking the steak and keep warm in the oven. In the same pan, fry the reserved onions until soft and lightly browned. Add a little marinade, if desired. Arrange the steak on a plate and scatter the onions over it. Serve with potato salad. These steaks also taste great grilled or braised in a little marinade in the oven.
