Bernie's spaetzle pan with mushrooms and cheese

Ingredients for 3 servings:

  • 250 g spaetzle
  • 250 g mushrooms
  • 150 g ham, diced
  • 1 large onion(s)
  • 100 g cheese, grated, e.g. Edam
  • 2 eggs
  • salt and pepper
  • Paprika powder, sweet
  • some oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the spaetzle according to the package instructions with a little salt. Leftovers from the day before are also suitable. Peel and finely chop the onion. Clean the mushrooms and quarter them depending on their size. Heat a little oil in a large, high-sided frying pan. Fry the ham cubes and onion. When the onions start to brown, add the mushrooms and fry them. When everything is lightly browned, add the cooked spaetzle. Fry briefly, seasoning with salt, pepper, and paprika, stirring a few times. Don’t use too much salt, as the ham cubes are already salty. When everything is hot, crack the eggs into the pan and stir to distribute the egg. Keep turning until the egg is set. Now sprinkle on the grated cheese. When you see the cheese soften, stir it once, and the spaetzle dish is ready.
