Ingredients for 1 servings:

  • 250 g mixed berries, fresh (blackberries, raspberries and blueberries)
  • 50 g sugar
  • ½ pkt. vanilla pudding powder
  • 100 g butter, soft
  • 1 cake base

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 55 minutes

for a small cake

Wash and puree the berries. In a small saucepan, combine the berry mixture with the sugar and pudding powder and bring to a boil to make a pudding. Stir continuously and then remove from the heat to prevent burning. Let the berry pudding mixture cool to room temperature. Meanwhile, whisk the butter in a larger bowl until smooth. Stir the cooled berry pudding mixture into the butter a spoonful at a time. Once everything is mixed, fill a pie crust of your choice with it and decorate it. Tip: I baked a simple sponge cake in a small springform pan with a diameter of about 17 cm and cut it in half after it had cooled. This is a great summer cake.
