Ingredients for 4 servings:

  • 200 g berries, fresh or frozen
  • 500 g low-fat curd cheese
  • 150 ml low-fat milk
  • 120 g sugar, or 12 g sweetener powder
  • 2 tbsp lime juice
  • 2 egg whites, very fresh
  • possibly mint, for garnishing

Working time approx. 10 minutes; Total time approx. 10 minutes

Light and fruity quark

Wash or thaw the berries and drain in a sieve. Set aside a few berries for garnish, then puree the remaining berries with a hand blender. In a separate bowl, combine the quark with the milk, sugar or sweetener, and lime juice until smooth. If desired, pass the berry puree through a sieve and then stir into the quark mixture. Beat fresh egg whites until stiff peaks form and carefully fold into the berry-quark mixture. Divide among glasses or small bowls and chill for about 30 minutes. Garnish with the remaining berries and, if desired, mint leaves just before serving. Tip: Use a variety of berries, such as raspberries, blueberries, strawberries, etc.
