Berry compote, grandma's style

Ingredients for 4 servings:

  • 100 g blueberries
  • 100 g blackberries
  • 100 g strawberries
  • 100 g currants, red
  • 200 ml apple juice, clear
  • 100 ml water
  • 4 tbsp sugar
  • 1 pinch of vanilla powder
  • 6 tsp cornstarch

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 28 minutes

Bring the blueberries and blackberries to a boil with 100 ml apple juice and 50 ml water, add 2 tablespoons of sugar, dissolve, and simmer for 3-4 minutes. Mix 3 teaspoons of cornstarch with a little water, thicken the berries, and divide between 4 dessert glasses. In a second pot, bring the strawberries and currants to a boil with 100 ml apple juice and 50 ml water, add 2 tablespoons of sugar, and dissolve. Add the vanilla and simmer for 3-4 minutes. Mix the remaining cornstarch with a little water, thicken the berries, and divide between the blueberries. Let cool in the refrigerator for about 1 hour.
