Ingredients for 1 servings:

  • 250 g raspberries or blueberries or strawberries
  • 250 g flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg(s), alternatively 80 g apple sauce
  • 125 g sugar, a little less for fructose!
  • 2 tsp, levelled vanilla sugar, (bourbon with cane sugar)
  • 80 ml vegetable oil
  • 250 g natural yogurt, possibly lactose-free

Working time approx. 20 minutes; Total time approx. 20 minutes

Quick recipe, also egg-free and lactose-free possible

Preheat the oven to 180 degrees Celsius (160 degrees Celsius fan-assisted) and grease the baking tray. Wash, hull, and sort the berries. Frozen berries can be thawed slightly. Combine the flour with baking powder and baking soda. Whisk the egg and mix with the sugar, vanilla sugar, oil, and yogurt. Mix in the berries, then quickly stir in the flour mixture. Pour the batter into the baking tray and bake for 20-25 minutes until golden brown. Let it rest in the tray for 5 minutes, then remove and let cool.
