Ingredients for 6 servings:

  • 2 cups of cream, 200g
  • 1 cup sugar
  • 2 bags of vanilla sugar
  • 1 pinch of salt
  • 4 eggs
  • 3 cups flour
  • 1 sachet of baking powder
  • 500 g berries, mixed or other fruit
  • 2 tbsp flour

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the cream, sugar, and vanilla sugar until almost stiff peaks form, then beat in the eggs one at a time. Always measure using an empty cream cup. Fold in the flour mixed with the baking powder until a smooth batter forms. Pour into a greased 26cm springform pan. Mix the berries with the flour and spread over the batter. Bake for 70 minutes at 150°C fan/convection oven. You can also halve the batter; then it will be large enough for one muffin tin. Then bake for only about 30 minutes at the same temperature.
