Best cheese spaetzle in the world

Ingredients for 4 servings:

  • 300 g flour
  • 3 eggs
  • 1 pinch of salt
  • 1 shot of carbonated mineral water
  • 5 mushrooms
  • 60 g bacon
  • 1 cup of cream, approx. 200 g
  • 200 g mountain cheese, grated
  • pepper
  • nutmeg
  • Garlic granules
  • Herbs, frozen or fresh, e.g. 8 herb mix or parsley and chives

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Mix flour, eggs, salt, and mineral water into a firm dough and place it in a spaetzle press. Press the spaetzle into hot water. When they float to the top, remove them with a slotted spoon. Chop the mushrooms and bacon and fry them together. Add the spaetzle and deglaze with the cream. Season the sauce to taste. Stir in the mountain cheese and let it melt with the lid on. Serve.
