Ingredients for 4 servings:

  • 4 tbsp butter, soft
  • 1 garlic clove(s), finely chopped
  • 1 tbsp parsley, freshly chopped
  • 1 tbsp chives, freshly chopped
  • 4 chicken breast fillets
  • breadcrumbs
  • 3 tbsp Parmesan, freshly grated
  • 1 egg(s), beaten
  • Salt
  • pepper
  • oil

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the butter with the garlic and herbs thoroughly. Add salt and pepper. Mix the breadcrumbs and Parmesan cheese. Pound the chicken breast slightly until it is evenly thick, then cut a pocket for the herb butter and fill it. Pin the open sides of the fillet together. Then bread the whole thing and repeat the breading process after 30 minutes. Deep-fry in a pan at about 180 degrees Celsius. Tastes delicious with potatoes and vegetables.
